Goat Cheese, Honey and Pistachio Appetizer

For years now, I’ve been making my favorite Honey & Goat Cheese Ball for holiday events. Never has this dish (best served with Wheat Thins, I’ve come to find) failed to please, and many times I’ve had friends or family members ask me for the recipe. It’s super easy. And the best part? It pleases both vegetarians AND carnivores!

In light of Thanksgiving, and wanting to make it easier for all you girlfriends/boyfriends trying to impress your significant other’s parents, I thought I would share my surefire appetizer. Make sure you let me know how it works out for you and your families!

4 ounces goat cheese (chèvre)
8 ounces cream cheese
Pistachios (shelled and chopped)
2 tablespoons honey
2 teaspoons thyme (I suggest buying fresh and plucking the leaves yourself, but be careful to leave out the stems!)

1.) Let cream cheese and goat cheese come to room temperature (it’s easier to mix this way).
2.) In a medium bowl, thoroughly mix goat cheese, cream cheese, honey and thyme. I suggest using a KitchenAid Stand Mixer on medium.
3.) With a spatula, transfer mixture to a flat surface (I prefer a wood cutting board) and form into a ball. This is much easier than it sounds, trust me.
4.) Roll cheese ball over chopped pistachios so that the outside is coated.
5.) Refrigerate for at least one hour before serving with Wheat Thins, bagel chips or a fresh baguette!
